EASY APPLE CRISP

Base:
6 apples, peeled and either chopped or sliced (see notes)
3/4 tsp. cinnamon
2 tbsp. granulated sugar
1-1/2 tsp. lemon juice
Topping:
1 cup light brown sugar
3/4 cup old-fashioned oats (see notes)
3/4 cup all-purpose flour
1 tsp. cinnamon
Pinch of kosher salt
1/2 cup cold unsalted butter (see notes)

Preheat your oven to 350°F. Butter an 8×8 baking dish or spray it with non-stick cooking spray.

Combine apples, sugar, 3/4 tsp. of the cinnamon and the lemon juice in a bowl. Transfer the mixture to the baking dish.

In a separate bowl, combine the ingredients for the topping (brown sugar, oats, flour, 1 tsp. cinnamon, salt and butter.)

Spread the topping over the base in the baking dish.

Bake 40-50 minutes until golden brown and bubbly.

Serve warm (with out without ice cream or whipped cream.)

Notes:

• I usually use Golden Delicious apples, but other apples can be used as well. I usually end up with about 6 cups of apples.

• Make sure the butter is cold (I sometimes put it in the freezer for a little while to make sure it’s cold enough.) Use a pastry cutter or even two knives to combine it with the oat mixture until it is pea-size crumbs.

• I use old-fashioned oats. If you use any other oats, the texture will likely be different.

• Depending on the water content of the apples, your finished apple crisp might have a little juice. To prevent that in the future, add a little flour to the apples before you bake.
